Position Purpose
To Act as a vital part of the Kitchen Team by running the day-to-day operation of the kitchen & supporting the Head Chef with management tasks.

* Championing and celebrating the seasonality of produce.
* Understanding sustainability issues that relate to the kitchen and ensuring that they are incorporated into daily routines (sustainable species of fish and meat, organic and non-intensely grown produce from small suppliers, more creative vegetarian, vegan and gluten-free dishes).
* Working closely with our family farm to utilise farm-to-plate and nose-to-tail philosophy to its full potential.
* Eradicating the use of single-use plastic within our kitchens.
* Minimising food waste, by preserving, composting, repurposing, staff food, and donating to community charities
* Working with the wider team/s, to ensure that the above becomes second nature and not an additional chore
We are looking for an experienced and passionate Sous Chef to join the kitchen team.
This is a fantastic opportunity for a talented chef to evolve into a leadership role within a prestigious hospitality setting.
Key Responsibilities:
* Support the Head Chef in the day-to-day kitchen operations.
* Ensure exceptional food quality and presentation in line with the restaurant high standards.
* Lead and mentor the kitchen brigade, ensuring a smooth and efficient service.
* Oversee menu execution, contributing to seasonal menu development.
* Maintain strict hygiene and food safety standards in compliance with UK regulations.
* Manage stock control and ordering, ensuring cost efficiency and minimal waste.
* Work closely with front-of-house teams to ensure a seamless dining experience for the guests.
What We're Looking For:
* Experience as a Sous Chef in a high-end restaurant, luxury hotel, or private members' club.
* Strong leadership skills with the ability to train, mentor, and inspire junior chefs.
* A passion for seasonal, high-quality ingredients and modern cooking techniques.
* Ability to remain calm under pressure and deliver outstanding results in a fast-paced kitchen.
* Knowledge of budgeting, stock management, and cost control.
