The Copthorne Hotel Aberdeenis seeking an experienced Head Chef to lead the Kitchen team
Key responsibilities include:
1. Creating a stable working environment and high morale within the Kitchen team, providing training, guidance and support to each individual.
2. Creating menus, focusing on quality, taking into account guest preferences, seasonality and controlling food costs to achieve gross profit targets.
3. Placing food orders in line with purchasing instructions and specifications. Ensuring that the team are trained to deal effectively with receipt of delivery, authorising acceptance and overseeing correct storage of goods received. Effective control measures must be in place from delivery to service.
4. Ensuring that effective systems are in place for the operation and cleaning of equipment correctly, adhering to maintenance, safety requirements and cleaning schedules.
5. Ensuring appropriate systems and processes are in place to comply with regulations relating to Health & Safety, Food Safety, Hotel rules and regulations and Emergency procedures.
