The Role:
As Head Sushi Chef, you will be responsible for leading SUMI’s sushi offering, ensuring that every dish reflects the precision, technique, and artistry of Japanese cuisine. You will work closely with the kitchen and front-of-house teams to deliver an exceptional dining experience.
Key Responsibilities:
? Oversee the sushi programme, maintaining consistency, quality, and innovation in every dish
? Train, mentor, and develop the sushi team, fostering a culture of excellence and learning
? Manage sourcing and selection of ingredients, with a focus on top-tier seafood and seasonality
? Ensure HACCP and food safety standards are met at all times
? Work collaboratively with the Executive Chef to evolve and refine the sushi menu
? Engage with guests when appropriate, offering insights into the sushi experience and traditions
? Maintain high standards of presentation, precision, and execution in all sushi dishes
Who We’re Looking For:
? A highly skilled sushi chef with experience in high-end sushi restaurants
? Deep knowledge of Edomae-style sushi, fish preparation, and rice techniques
? A strong leader who can train and inspire a team
? Passion for Japanese cuisine, culture, and tradition
? Attention to detail and a relentless pursuit of perfection
? Ability to work in a fast-paced environment while maintaining quality
