Overview
We are looking for an experienced and creative Head Chef to manage the kitchen at an exclusive private use venue, specialising in seasonal, high-quality menus. This is an exciting opportunity for a culinary professional to build a small team and cater a range of prestigious events throughout the year.
As the Head Chef, you will be responsible for the day-to-day management of the kitchen, from menu creation and ordering to ensuring top-notch event catering. You’ll oversee all aspects of food preparation for high-profile functions such as weddings, corporate events, and weekend dining.
Scope of Role
Fasque Castle provides overnight accommodation for up to 42 guests, with the capacity to seat 120 in our Ballroom, and our in-house catering is key to the success of any event we host. Whether that is a four-course tasting menu, our summer BBQs on the terrace or the wedding breakfast for our happy couples, the role of Head Chef will be to ensure every meal created supports the overall five-star experience of staying at Fasque Castle.
Key Responsibilities
1. Maintain good relationships with customers, colleagues and suppliers (resolving issues with suppliers if any arises).
2. Strictly manage purchasing and financial controls related to kitchen operations, ensuring that supplies and/or orders are in line with set budgets and supervising food and labour costs.
3. Make sure that kitchen health and safety and food safety measures are compliant with legislative standards with best practice observed.
4. Work with management, coordination team and clients to create and develop dishes and menus that meet or exceed expectations and are of the highest standards.
5. Make sure that the culinary offering keeps up with or leads new trends in the industry.
6. Manage and maintain recruitment, work scheduling and training for all kitchen staff, to ensure smooth and effective workflow in the kitchen.
Qualifications, Skills & Experience
1. Good and effective communicator.
2. Excellent leadership and interpersonal skills, with the ability to work effectively in a team and as a team leader.
3. Good organisational and problem-solving skills.
4. Ability to multi-task and coordinate activities in pressing situations.
5. Must be creative and proactive in attending to the business and client needs.
6. Ability to thrive in a fast-paced environment.
7. An excellent knowledge of food handling and environmental health standards.
8. Qualified in food hygiene, ideally at intermediate level as a minimum.
9. Any other form of certification in catering would be of added advantage.
10. Minimum of 3 years of work experience as a chef in a supervisory role in a similar kitchen environment.
