Black Lacquer is our contemporary underground cocktail bar where eclectic music is celebrated and the same singular approach is taken to the sound as to the drinks. Whatever the time or day, Black Lacquer always delivers top-notch hospitality. The cocktail list is complemented by a curated list of sake and shochu, Japanese draft beer, and a selection of wine and Champagnes, with house-made non-alcoholic sodas rotated with the seasons.
Elevating bar food beyond the usual fare, Black Lacquer serves inspired Japanese small Izakaya-style plates designed to be eaten with the hands and shared.
Job Description
We’re on the lookout for a Junior Sous Chef to join our pre-opening team at Hyde London City. You will be responsible for the efficient running of the Black Lacquer kitchen and production of food at the highest standards, ensuring the kitchen area is clean and set up for service at all times.
What you’ll do…
* Take full responsibility for the running of Black Lacquer kitchen, with the Head Chef support.
* Nurture and develop the talent of the kitchen team, creating an environment that brings out the best in them and where they can be themselves.
* Ensure smooth order and delivery operations, maintaining service quality and high food hygiene standards.
* Collaborate with our Head Chef on innovative ideas and techniques.
* Think outside the box and drive standards, striving for efficient solutions while maintaining the menu's quality and integrity.
* Lead by example, keeping your team motivated and empowered, ensuring top Hyde experiences for our guests.
Qualifications
* 2+ years’ experience as a Junior Sous Chef in a busy environment with Japanese and/or pan Asian experience.
* Robata and/or sushi cooking experience is desirable.
* A true passion for creativity while maintaining brand standards through menu dishes.
* Natural leadership qualities, leading by example to create a supportive team environment.
* A desire to work in a place where individuality is celebrated.
* Passion for hospitality, whether it’s a drink, a meal, an event, or a bed for the night.
