The Role:
AsHead Sushi Chef, you will be responsible for leading SUMIs sushi offering, ensuring that every dish reflects the precision, technique, and artistry of Japanese cuisine. You will work closely with the kitchen and front-of-house teams to deliver an exceptional dining experience.
Key Responsibilities:
?Oversee the sushi programme, maintaining consistency, quality, and innovation in every dish
?Train, mentor, and develop the sushi team, fostering a culture of excellence and learning
?Manage sourcing and selection of ingredients, with a focus on top-tier seafood and seasonality
?Ensure HACCP and food safety standardsare met at all times
?Work collaboratively with the Executive Chefto evolve and refine the sushi menu
?Engage with guests when appropriate, offering insights into the sushi experience and traditions
?Maintain high standards of presentation, precision, and executionin all sushi dishes
