To then lead and oversee the smooth running of all on site events and delivering delicious, market leading, on brand food. To continually showcase the farm and market garden produce. Whilst maintaining highest food safety standards and delivering the agreed budget SALARY: 40000 Tronc HOURS: Full Time RESPONSIBILITIES Great Food To develop and deliver the food identity in the new events space, with the head chef Ensure events food and offer is evolving, deliverable, keeping up to date and leading the way with current food trends, innovation and techniques, whilst maintaining Daylesford food identity, seasonality and driven by Market Garden Write (with head chef) seasonal menus and publish to event planning team Stay up to date with all current food trends/ingredients Great People To be a role model to your team in terms of work ethic, service quality, professional skills and personal appearance Deliver team briefings on event (FOH and Kitchen) Whenever new starters, interns or apprentices are in the kitchen, they are encouraged, supported and shadowed, ensuring they have the best possible experiences Strong lines of communication with events team To bring fun to the workplace and ensure a happy, motivated and focused team To work closely with, communicate and support, Farmshop sous Chef and wider teams as needed Agree with head chef a time/day for regular meetings Great Numbers Understand and help deliver kitchen budgeted GP Understand and deliver budgeted events revenue Ensure set budgets and targets are understood Ensure weekly rotas are managed to deliver target wage costs ensuring correct staffing levels in line with business levels Agree, cost and book agency/freelance team in advance of events as needed Manage annual holidays, for yourself and in line with events business levels and presence at key periods Oversee the kitchen ordering effectively to ensure minimum waste with full availability Create and follow transfer processes for ingredients/dishes between events and items from farmshop kitchens Oversee, monitor and record accurate monthly stock levels Great Service To encourage swift, efficient, knowledgeable and engaged service team and event planners, through briefings and menu training Daily Operations and Personal Development Ensure maintenance procedures are understood and followed in order to maintain a safe workplace and take H&S responsibility for all kitchens under your control Ensure Food Safety procedures are trained and followed to meet company internal audit requirements Allergen Procedures are fully trained and are always followed Be aware of opening/closing procedures of the kitchen are being followed and recorded Maintain good lines of communication with the events team Stay up to date with online training Support other onsite head chef and team as required Attend weekly function sheet meeting Agree and have regular check in with head chef regarding progress of role and own successes within the role as it evolves PERKS & BENEFITS Discounts: We offer a range of discounts on our products, treatments, and dining experiences from day 1.
