Fratelli Ristorante provides an alternative dining experience within Roe Valley. Here we serve traditional Italian dishes with a modern twist. Our evening menu includes authentic Italian Cicchetti perfect for sharing, mouth-watering pizza, pasta dishes, and tempting mini desserts all feature on our unique menu. Serving up to and over 100+ customers mid-week and up to 200+ weekend evenings, this restaurant is popular with the locals and our hotel guests. We are seeking to recruit a talented, proactive, and dynamic Head Chef.

About The Role
Job Description:
The main duties of this role include but are not limited to:
* Coordinating the activity of kitchen staff and managing daily operations to ensure that the kitchen is running efficiently on a day-to-day basis.
* Liaising with our Executive Chef to design menus, manage wage costings and food budgets.
* Ensuring all junior chefs and kitchen staff are well trained and managed.
* Ensuring that there is adequate staff cover at all times whilst achieving budgeted wage percentages.
* Managing your team to ensure the preparation and cooking of food is of a high standard and is delivered on time.
* Build strong working relationships with all resort chefs and collaborate closely with them to drive sales and continually improve standards.
* Liaising closely with Restaurant Manager and Food & Beverage Manager to drive sales and standards of service.
* Managing food stocks and ordering supplies.
* Working within and maintaining all associated Health, Safety & Hygiene guidelines and procedures.
* Working with Human Resources ensuring all people management policies and procedures are adhered to.
* Demonstrating effective communication skills with staff and managers at all levels.
Applicant Criteria:
* Previous experience working as a Head Chef managing a successful, busy kitchen.
* Proven track record and shown loyalty throughout their career.
* Have strong organisational skills.
* Have strong leadership skills.
* Have a flexible approach to working shifts pattern and weekends.
* Have a hard-working attitude and be prepared for a challenge.
* Enjoy working as part of a team and be able to work well under pressure.
* Display a pleasant manner and be well presented.

Desired Criteria
* Level 3 Food Hygiene
Required Criteria
* Communicates clearly and have a professional manner
* Able to work in a high-volume environment
* Can work as part of a busy team to ensure customer’s needs are met
* Must be willing to train when necessary
* Enthusiastic and keen to learn new skills
* NVQ level 1 & Level 2 Food Preparation or equivalent
* Level 2 Basic Food Hygiene Certificate
* Must have 2 years’ previous experience in a similar position
* Must be able to prioritise workload
* Must be highly motivated and able to thrive under pressure.
* Ability to supervise staff in a competent manner
* Ability to produce good quality cuisine without close supervision
* Excellent knowledge of Health & Safety and food standard requirements
* Be able to work and support Executive Head Chef/Sous Chefs
* Reliable and able to fulfil contracted hours and work patterns eg days, evenings, weekends
* Must be able to travel to work
* Must be available for bank holidays including Christmas holiday period
