As a Sous Chef at Nuffield Health, St. Bartholomew's, 30 Giltspur Street, EC1A 7BS, you will work under the guidance of the head chef and be responsible for managing a section of the kitchen, ensuring that all dishes are prepared to the highest standards. What you’ll do:
* Ensure proper supply ordering
* Coordinate meal production for restaurant and special dietary needs for patient meals
* Download daily menu productions on DRIVE
* Complete and record food/equipment temperature checks, in line with safe catering system, and report problems
* Maintain stock at agreed levels to meet restaurant and patient needs
* Manage patient meal delivery to ward areas
* Adhere to legislation and policies in the patient meal service
* Report incidents (accidents, fire, theft, etc.) to Catering Manager, and follow investigation actions
* Report mechanical/electrical defects to Catering Manager and take unsafe equipment out of service
* Timely record service standards and retain secure records (, temperature monitoring, raw material control)
* Compile work rosters, authorize annual leave, and manage unplanned absence coverage with Catering Manager
* Ensure cleanliness and hygiene throughout the kitchen, utilizing staff as required
* Ensure staff training on the correct use of all kitchen machinery
* Ensure correct staff uniform is worn
* Conduct routine Quality Control Audits and assess performance levels
* Attend weekly meetings with Catering Manager and Host Supervisor
* Assist with administration duties and deputize for Managers when needed
* Organize and compile staff training sessions with the Catering Manager
* Assist in kitchen operationsthrough team management and service delivery
o Order provisions following Sodexo policy and suppliers
o Ensure kitchen and food service areas are clean and maintained, reporting issues
* Complete Sodexo SMS paperwork (temperature checks, electrical checks, COSHH, HACCP)
* Pass internal and external audits (safeguard, EHO, Nuffield audits)
* Complete monthly billing and close accounts on time
* Comply with reasonable requests from the line manager within required time frames
* Manage staff performance to ensure service excellence and quality delivery
* Train team members using Sodexo GREAT training cards, induction, and Nuffield training
* Ensure weekly rotas are completed on time and labor is managed within budget
* Perform well under pressure, maintaining professionalism and resilience
* Be a dedicated team player, striving for excellence and leading by example
* Maintain discretion while observing safeguarding and professional standards
* Maintain a smart and professional appearance, representing the hospital positively
* Manage emails and correspondence in a timely and professional manner
* Exhibit high accuracy and attention to detail
* Be self-motivated and work independently
* Adaptable and flexible with working patterns as needed
What you bring:
* Good interpersonal skills and ability to be an effective team player
* Flexible and able to work under pressure
* At least 3 years’ experience in high volume catering
* Previous experience at Sous Chef level and shift leadership
* Excellent culinary skills
* Hold valid ‘Intermediate Food Hygiene’ certificate
* NVQ Level 3 and Level 3 Food Safety Certificate (preferable)
* Excellent spoken and written English
* Strong problem-solving and organizational skills
* Strong leadership and communication skills with all stakeholders
* Good IT skills, with knowledge of Word and Excel
* High standards of personal presentation
* Experience with food allergies, special diets, and labeling
