Job Title: Hotel Head Chef
Summary: To prepare food items in accordance with business demands, produce dishes to set standards, and manage kitchen operations in a 4-star hotel with 2 AA Rosettes.
Main Responsibilities:
* Prepare and produce food items to meet business demands and set standards.
* Order, check in, and store food items in accordance with laws and agreements.
* Perform regular temperature checks of cooked and refrigerated foods according to law.
* Maintain records for temperature checks, health and safety procedures, and chemical usage.
* Manage staff rotas, ensure sufficient shift cover, and recruit new staff.
* Plan and implement new menus, including costings and recipes.
* Monitor food stocks, achieve or improve budgeted gross profit, and drive business forward by producing high-quality food.
* Undertake other reasonable requests made by management.
Requirements:
* Proven experience as Head Chef in a 4-star, rosette-winning hotel for at least 2 years.
* Strong leadership and team development skills, with the ability to motivate and guide staff.
* Good understanding of P&L analysis, gross profit, menu costing, wage budgeting, and purchasing.
* Experience in monitoring health and safety, COSHH, allergens, and food safety procedures.
* Passion, enthusiasm, and creativity in the kitchen, with a focus on high-quality food preparation and presentation.
Additional Information:
* Accommodation is provided on an all-inclusive basis.
* Salary: From 50,000 GBP.
* Location: Lavenham, Suffolk.
* 4 days on, 3 days off per week.
