ABOUT THE ROLE: The Assistant Bakery Manager helps the Head of Department in leading a team of passionate Chefs, Bakers and Production Assistants in producing award-winning organic baked goods to be sold in our 4 Farm Shops, their integrated cafes/restaurants, as well as to some high-quality Wholesale customers.

HOURS: Full Time 45 hours
RESPONSIBILITIES
* Support the Head of Department in leading a team of Chefs, Bakers and Production Assistants in producing a range of organic baked items, for supply to our Farm Shops, as well as their integrated cafes and the Bamford Collection’s pubs/hotels, across 7 days a week.
* Support in maintaining and improving the award-winning quality of Daylesford Organic products produced in the Bakery.
* Contribute to the development and launch of exciting and innovative seasonal products.
* Oversee the execution of all baked products as per company specifications.
* Ensure that all food preparation is completed in a timely and professional manner.
* Adhere to the organic standards as set out by the Soil Association.
* Be adaptable and responsive to the business’s desire for seasonal range-changes.
* Deputise in the Head of Department's absence.
* Ensure that all ingredients are prepared, weighed and measured ready for production.
* Supervise the team in ensuring that all food production duties are carried out with care and diligence to guarantee the production of a consistently high standard of product, along with minimal levels of wastage.
* Ensure that the team are following the correct due diligence and traceability procedures.
* Ensure that the team’s tasks are completed efficiently within the timeframe given.
* Hold full responsibility for the processing of daily orders and recipes.
* Work safely and efficiently to ensure that all daily orders are completed above the required fulfilment rate.
* Minimise wastage levels as much as possible.
* Comply with the production unit’s internal audit requirements.
* Aid the Head of Department in the fulfilment of the Bakery/Pastry’s annual financial/budgetary targets.
* Assist in the line management, development and motivation of the team.
* Assist with the induction and training of new team members.
* Participate in the effective communication amongst the team regarding any changes to recipes, procedures and/or operational needs, and amongst the company and other customers regarding any quality issues/shortages in the required timescales.
