About the Role
As a Sous Chef, you'll be an integral part of a team delivering exceptional dishes at one of the most renowned traditional British pubs just outside of the Royal Tonbridge wells area. Working alongside a skilled kitchen team and Head Chef, you'll help manage the preparation, cooking, and presentation of meals that keep guests coming back for more. Whether its perfecting a Sunday roast or working with the freshest seasonal produce, your attention to detail and leadership will ensure the kitchen operates smoothly.

Our client is a beautiful 15th-century free house nestled in the heart of Penshurst, Kent. The Pub kitchen creates modern British pub cuisine, with a focus on sustainability and locally sourced ingredients. Under the guidance of their expert kitchen team, they create dishes that stand out for their quality and creativity. Guests can enjoy an inviting atmosphere, with everything from a warm fire in winter to a charming outdoor dining space during the summer.
Working Hours
* 48 hour week
* 5 days working 2 days off
* 28 days holiday including bank holidays
Key Duties
* Oversee kitchen operations in the absence of the Head Chef
* Assist in menu planning and developing seasonal specials
* Manage food preparation, cooking, and presentation to meet high-quality standards
* Ensure compliance with kitchen hygiene and safety regulations
* Support and mentor junior kitchen staff
* Assist with stock control and ordering supplies
* Maintain food cost controls and ensure a smooth-running service
Key Requirements
* 3 years + proven experience within a sous chef role
* Strong knowledge of British cuisine with a focus on fresh, seasonal ingredients
* Experience working in a pub environment.
* A positive attitude, willingness to learn, and ability to work under pressure
* A NVQ level 2 qualification within the related industry.
