Sous Chef
One of our clients is looking for a new sous chef to work with the Head Chef to help maintain the operating standards of performance, ensuring that kitchen hygiene standards are always adhered to. This role ensures guests receive effective communication with all departments and the highest level of customer care.
Your responsibilities
* Assist the Head Chef in planning, organizing, and controlling the day-to-day operation of the department to maintain established standards of performance and achieve total guest satisfaction.
* Ensure HACCP is in place to prevent food poisoning while supervising the team, allocating special duties and responsibilities.
* Supervise all food preparation and production in all kitchens.
* Monitor the temperature, quality, and portion size of all food served from the kitchen areas.
* Set standards in conjunction with the Team and maintain these through training and promotion.
* Ensure good communication throughout the Kitchen Department at all times.
* Control refrigeration and dry store goods to minimize waste.
* Ensure all food leaving the kitchen meets pre-agreed high standards and is served at the required temperature.
* Keep all areas of responsibility sanitised and free from dust and debris, following strict cleaning schedules.
* Deputise for the Head Chef in their absence.
* Attend meetings as requested by Management or the Head Chef.
* Oversee the compilation of all colleague rotas according to occupancy levels.
* Oversee the training of new colleagues and ongoing training for existing colleagues.
* Appraise colleagues regularly to maintain a stable and motivated workforce.
* Set measurable objectives for subordinates and monitor them through regular appraisals.
* Take an active role as a team member, welcoming new colleagues and participating in training initiatives.
* Communicate relevant matters to the team and ensure familiarity with product knowledge and future plans.
* Maintain colleague discipline and grievance procedures in accordance with company guidelines, keeping records of issues where appropriate.
* Develop a well-motivated team and address any lack of team spirit with remedial action.
* Evaluate standards achieved and identify training needs, taking appropriate action where required.
* Complete daily, weekly, and monthly checklists fully as required and ensure they are filed and communicated to relevant personnel.
* Your work will be assessed throughout your employment as deemed necessary by your supervisor, with regular appraisals being evaluated and recorded.
Chef experience in hotel/restaurants is essential.
