We are looking for a highly professional Sous Chef to join our Kitchen team for the very exciting opening of The Alfriston located in East Sussex, which dates back to the 14th century and is the fourth property in the growing Signet Collection.
The newly refurbished Hotel has 38 beautifully redesigned bedrooms and suites, a stunning function room, The 1554 Brasserie, offering views over the front lawn towards the sea and revamped herb and vegetable plots across the hotel gardens. The hotel bar offers more casual dining for guests both in and outdoors, while the Orangery serves breakfast and afternoon tea with views over the rear gardens and the Signet spa includes a steam room, sauna, outdoor swimming pool and three treatment rooms.

You will:
* Deputise in the Head Chef's absence.
* Ensure that all chefs are familiar with the day's requirements.
* Ensure that the necessary stocks are on hand at the right quality and quantity.
* Ensure that fair discipline is maintained.
* Ensure that all staff are treated fairly and with commonly accepted courtesy.
* Ensure that timetables, leave rosters and attendance registers are up-to-date.
* Ensure that all statutory, as well as company, hygiene regulations are being strictly adhered to and maintain records and logs.
* Monitor and maintain health & safety compliance standards to adhere to current legislation.
* Ensure that all maintenance problems are reported and followed up.
* Ensure that all communications between restaurant and kitchen run smoothly.
* Ensure that each cook receives the correct orders for the appropriate tables.
* Ensure that each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature.
* Ensure that regular on-the-job training is carried out so that subordinate staff perform their duties correctly.
* Attend seminars and training courses as and when directed. This is to further your own knowledge of management methods and principles to ensure future advancement and further upgrading in management standards for the profession as a whole.
* Support all chefs with recipe knowledge and assist in troubleshooting.
