We are looking for an enthusiastic Head Chef, who would enjoy working with a close knit team in a family environment, committed to providing outstanding service and high quality dining of a Rosette standard.
This Hotel is an independent family run establishment for the last 30 years, set in the Berkshire countryside with 12 bedrooms and Brasserie Style Menu using fresh ingredients. The restaurant menu uses seasonal dishes and changes on a regular basis, however still keeping the classics. Mainly catering for residents’ midweek. Can be a little quiet midweek, but time used wisely in looking ahead at the weekend business. Weekends the focus are weddings where exclusive use of the hotel and grounds are taken allowing us to concentrate on one event at a time.
You will be responsible for as a Head Chef (All Rounder):
* All ordering for the kitchen including housekeeping supplies.
* Maintain record keeping food hygiene, date labelling and cooked temperature records.
* Maintain cleaning records within the Kitchen.
* Stock rotation, sensible stock holding.
* Good communication with colleagues, discussing dishes to ensure Allergies are delt with Allergen records.
General hours of work:
Straight shifts, two days off per week, these normally taken during the week due to peak periods at the weekend.
Typically
Monday, Tuesday, Wednesday normally 3pm start. Thursday 11am start. Friday 3pm start unless have an event on. Saturday same as Frida...
