You must be a competant Senior Chef De Partie level and love producing high quality food. As well as the Rosette restaurant, the hotel has many weddings throughout the year and so this must also be an area you are strong in. In terms of the style of food, you will be equally passionate about producing fine dining menus as well as heartier dishes such as a Sunday Roast and have a good eye for detail for Afternoon Tea. As Junior Sous it is important that you are someone who can learn and develop with the team around you, working closely with the Senior team in developing menus and ideas. This is an independent hotel and so the role is more suited to someone from a similar background rather than a large branded hotel.
