All benefits subject to availability About the Role Our award-winning kitchen team have an exciting new opportunity for a Junior Sous Chef to join us on a permanent full-time basis. You will create exquisite dishes using locally sourced Scottish produce and be responsible for having your own section whilst gaining invaluable guidance and development within a multi outlet hotel kitchen. In this role you will assist the Head Chef & Junior Chefs in the preparation and service of food ensuring that the highest standards are maintained at all times. Additionally, you will ensure that the kitchen areas designated, equipment and utensils are always kept clean and tidy to the Old Course Hotel standards. Your responsibilities will include: - Manage and oversee food production as directed by the Senior Team and to present it at the times required. - Assist the Head Chef & Executive Chef in the planning, preparation and execution of new menus and ideas. - Make sure that the Chef de Parties, Commis Chefs, Demi Chefs are working to standard, supervise, guide and motivate them - Maintain high levels of communication between Senior Team and Chef de Parties at all times, in particular ensuring special messages & requests are dealt with promptly. - Assis Head Chef / Sous chef in the ordering of food purchases and stock control, ensuring that stock levels are in line with business levels. - Maintaining discipline in a fair and consistent manner including timekeeping. - Have you own basic set of equipment including knives, pallet knives, mini scales etc. - To understand the menus and operating procedure of the kitchen and run your section accordingly. - Ensure all HACCAP systems are followed, and due diligence is completed on a day-to-day basis by you and the team. - To be fully conversant with your departmental LQA standards To be successful in this role you will have: - Similar experience in 5-star establishment - The desire to move into a management position with increased responsibilities. - Solid knowledge of culinary terminology and techniques - SVQ 1 & 2 an MVQ or equivalent qualification. - Competencies in breakfast cookery, vegetable preparations, rice, pasta and starches cooking and sandwich preparation. - Competencies in meat, fish and poultry preparation. - Intermediate Food Safety (desirable) Hours Full time, 40 hours per week Remuneration £34,200 per annum Benefits - Free meals and drinks in our complimentary staff canteen - Discounts across the resort including in our restaurants, room rates, pro shop and golf course - Wider group discounts within Kohler group. - Free access to our on-site gym and spa facility. - Free access to our The Dukes Championship Golf Course - 24/7 access to the Employee Assistance Programme The Old Course Hotel, Golf Resort and Spa is an equal opportunities employer.
