MAIN PURPOSE:
To manage the kitchen and its staff and prepare and cook meals to a high standard and to the standard set by Brainkind.
MAIN TASKS AND RESPONSIBILITIES:
* Responsible to plan weekly menus in consultation with Head of Operations and service users.
* To ensure that all food is correctly and safely prepared and stored, and presented in a way which meets agreed Brainkind standards.
* To ensure that all catering staff follow the Environmental Health standards.
* To ensure that all catering staff follow Brainkind policies and procedures.
* Responsible to develop and implement systems to ensure all equipment is left clean at end of shift.
* To ensure recording of cleaning and equipment maintenance schedules is in line with Brainkind policies and procedures.
* To report equipment faults, repair and maintenance needs in line with local procedures.
* To record all information as required by Brainkind policies and procedures.
* To attend and contribute to Quality Improvement Groups as required.
* To assist and support the external audits and environmental health inspections.
* To ensure all staff are trained and any training needs are identified.
* Facilitating the safe and smooth running of the Service, the post holder is expected to maintain a safe working environment, maintain service user confidentiality, and occasionally taking on reasonable additional tasks.
OTHER RESPONSIBILITIES:
* This post holder manages the delegated budget of the catering department and will be expected to ensure costs and expenditures are kept within agreed limits.
* To manage and lead Chefs and Catering Assistants under the guidance of Head of Operations.
* Accountable to provide services that meet the Brainkind and regulatory body standards.
* Responsible to attend and participate in meetings as a main representative on the service.
ABOUT YOU:
* Level 3 Food Hygiene or willing to work towards achieving this.
* City and Guilds 706/707 1&2 or 7100 or NVQ 3 in general catering/equivalent.
* Previous experience of managing kitchens.
* Experience of meeting nutritional needs and requirements on an individual basis.
* Knowledge of regulations, e.g. COSHH, Health & Safety, HACCP.
* Ability to work as part of a team.
* Ability to work closely with service users and communicate effectively with them.
* Interpersonal skills and managing difficult conversations with service users and staff.
* Able to communicate effectively verbally and in writing.
* Able to adapt quickly to last-minute changes and different situations.
* Demonstrable skills in cooking for large groups of people essential and an ability to cater for varying dietary needs desirable.
* Competent IT skills.
