Were looking for a Head Chef.
This is a fantastic opportunity to take over a busy pub kitchen with a great reputation for dining. In the last 12 months our food has been recognised by locally and nationally including mentions in The Times, Waitrose Food Magazine and Food Mag. Youll be taking over a well-established kitchen team in a recently refurbished kitchen which is well-stocked with modern equipment. We have a great network of local suppliers and a fantastic, loyal customer base.
The pub is independently owned and run. Great rates of pay and flexible hours. Accommodation is also available.

Head Chef
The Hour Glass is a very well-known, popular, old-fashioned pub with a loyal following in the beautiful cathedral city of Exeter, only a short drive to the beach or to the rugged beauty of Dartmoor. The pub has always enjoyed a great reputation for its food offering. In the last 12 months we have been highlighted by The Times and Food magazine as one of the best dining pubs in Devon and our Sunday lunch was featured in Waitrose Food Magazine. Were on the search for a Head Chef to lead our well established kitchen team. With two dining rooms with a combined 50 covers and a great bar area, a busy service is currently about 60 covers.
The a la carte menus are affordable and are based around the best local, seasonal produce we can source. We have established relationships with many small local suppliers. We also love to explore our local food heritage and have been working with lecturers from Exeter University to discover historic recipes and techniques.The kitchen trading hours are Monday to Saturday evenings and Friday, Saturday and Sunday lunchtimes. The kitchen currently operates on a rota with 3 chefs and an apprentice working between 6 and 2 shifts per week. In addition there are 4 kitchen porters. As Head Chef you will have responsibility for creating menus, staffing the kitchen and writing rotas, ordering and stock management as well as overseeing our Food Safety programme.
The kitchen was refitted two years ago and is in very good condition with a wide range of equipment.
The pub is well known for its warm welcome - we have a small and friendly team and this aspect is very important to us. The owners, who also run Exeter Brewery, are hands on and very supportive and friendly.

Salary from: 40K plus tips (currently approx. £600/month) plus bonus/profit share (expected to be 5k in first year with easily attainable targets). Package is therefore approx. 50K+
