Job Description
Responsibilities and Duties
1. In the absence of the Head Chef, run the kitchen and service the business as required.
2. In the absence of the Head Chef, manage, lead, and motivate the Kitchen team.
3. Help to ensure the smooth running and operation of the Kitchens on a day-to-day basis.
4. Comply with and implement all Statutory Health & Safety and Food Hygiene standards and help to ensure that staff are fully aware of these.
5. Assist the Head Chef with the training and development of the Kitchen team to achieve a high quality of product and presentation.
6. In the absence of the Head Chef, manage staff rotas to service the business efficiently and ensure that labour costs are kept within budgeted targets.
7. Ensure foodstuffs are used correctly so that wastage is kept to a minimum and staff are trained to effect good portion control.
8. Help meet relevant financial targets as agreed with the General Manager.
9. As and when applicable, ensure all invoices are processed and accounted while keeping advice notes, delivery notes, and invoices for the stock taker and the accounts department.
10. Assist in the ordering of stock to ensure that the kitchen is adequately stocked with all necessary goods of the right quality and price.
11. Help ensure stock rotation is followed and all store rooms, fridges, and freezers are in order, temperature records are kept, and food labeling is up to date.
12. Ensure stock is secure and that wastage is kept to a minimum.
Qualifications and Skills
The ideal candidate will have Sous Chef experience.
