About the Role:
To assist in the smooth running of the Food and Beverage Department, supporting the Executive Head chef and ensuring the facility operates efficiently and in line with budgets and the highest standards of customer service achieved. As Senior Sous Chef, you will be responsible for contributing to menu creation, managing, and training the kitchen brigade to deliver an excellent Guest and Member experience.
As Senior Sous Chef you will also be required to forecast and manage the food costs and labour line of the business. You will also support in the delivery of bespoke special events, assist in the training of multiple culinary teams, the monitoring and maintenance of culinary and hygiene standards, and ensuring all ASM Global standards are met every day.
Key Responsibilities:
* Have a hands-on approach to food preparation & service, able to lead from the front when required.
* Have an exceptional drive for quality, seasonal food.
* Be a strong people manager, assigning jobs to and motivating a large kitchen team.
* Assist in designing and introducing new Hospitality and Concession food menus in line with the company menu development framework.
* Liaise with clients and stakeholders in a professional manner, e.g. our partners Chef Tom Barnes from Umbel Restaurants, and event organisers looking for special events and menus.
* Ensure that the food quality is consistently high & that all hygiene standards are met and exceeded.
* To assist in maintaining and completing relevant paperwork regarding production, wastage and cleaning records.
* Assist the Executive Head Chef in all tasks, particularly in their absence.
* Ensure resources meet business needs through the effective management of working rotas.
* Support ASM Global’s brand standards through the training and assessment of the kitchen team.
* Assist in the management of the departments financials.
* Liaise professionally with all other departments at the AO Arena.
* Any other reasonable duties as instructed by Executive Head Chef and F&B management to meet the needs of the business.
About You:
* Demonstrable career in hospitality (and hospitality management in a similar, ideally within the entertainment/leisure industry).
* Strong interpersonal skills and the ability and confidence to make decisions.
* Ability to remain calm under pressure.
* Fantastic team ethic.
* A desire to develop their career.
* Have knowledge and understanding of current health and safety regulations.
