We are looking for aSous Chefwho will work closely with the Executive and Head Chef, to ensure the smooth running and success of all food related parts of the business. This is a key position for all aspects of the operation and will develop a close working relationship with all teams within The Conduit.
Our rooftop restaurant Rucola is strongly aligned with our desire for sustainability, by promoting a for zero waste kitchen environment, carbon neutrality, and responsible sourcing from local producers.
The restaurant looks to encourage consumers to consider the impact of biodiversity and seasonality in the food and wine that we consume, and nurturing positive relationships between supplier and Producers.
The Rucola menu focusses on the flavours of Northern Italy, with a seasonally changing, plant driven, menu which will always highlight the best produce available.
As ourSous Chef, you will have experience and skills in team leadership, building relationships with stakeholders, training and mentoring, health and safety, stock take, and extensive knowledge on food and a strong interest in organic and artisan foods.
Skills and experience
* At least 12 month experience at Sous Chef level
* Hold a current Food Safety level 2
* Confident to lead section, and support the development of the junior kitchen team.
* Committed to working in an environment where Sustainability and Seasonality are a key focus
* Knowledge of regional Italian cuisine
* Previous knowledge of Food Alert, Alert 65, Stocktake Online and Harri would be useful.
