Are you ready to lead the kitchen in a prestigious luxury hotel set amidst the breathtaking landscapes near Hereford and Gloucester? This magnificent property, featuring 300 exquisitely designed bedrooms, invites you to join as their Head Chef. The hotel boasts a dual dining experience: a relaxed atmosphere at the Market Kitchen and an elevated formal experience at the Brasserie.
Key Responsibilities
1. Lead the Kitchen Brigade: Oversee all aspects of kitchen operations on a daily basis.
2. Creativity & Innovation: Develop and create new menus that feature high-quality, seasonal, and locally sourced produce.
3. Quality Control: Ensure that every dish meets the highest standards of presentation and taste.
4. Team Management: Supervise, mentor, and train kitchen staff while fostering a positive and efficient work environment.
5. Cost Control: Develop accurate menu costing, manage stock, and minimize waste.
6. Supplier Relations: Work with local suppliers and manage ordering of ingredients.
7. Health & Safety: Ensure compliance with food hygiene and safety regulations.
What The Hotel Is Looking For
1. Experience: At least 2 years as Sous Chef or Head Chef in a high-end dining environment (gastro pubs, restaurants, or similar).
2. Technical Skills: Ability to create innovative dishes, cost menus, manage high volumes, and control wastage.
3. Leadership: Ability to prioritize tasks, manage a high-pressure kitchen environment, and lead by example.
4. Passion: A strong passion for fresh, high-quality food and a commitment to using seasonal and local ingredients.
5. Team Development: Strong focus on empowering and mentoring the kitchen team.
6. Flexibility & Proactivity: Must be adaptable, with a "Can Do" attitude.
Requirements
1. Minimum of 2 years’ experience as a Sous Chef or Head Chef.
2. Proficiency in creating innovative dishes using fresh, locally sourced ingredients.
3. Experience in managing costings, stock, and wastage.
4. Knowledge of food hygiene and safety standards.
5. Strong leadership and communication skills.
6. Attention to detail and an eye for food presentation.
