The Role A unique opportunity has arisen at the Headland Hotel and Spa. We are actively seeking a Head Chef to lead our amazing team in Terrace Restaurant. The Terrace stretches around the south and west sides of The Headland with commanding views over the sand and surf. By day it’s vibrant and casual. Come in off the beach with the kids, spread out in our big chairs and treat yourself to local seafood specials, filling subs or an indulgent Cornish cream tea. When the weather’s good, eat out under wide blue skies. Main Responsibilities: Lots to do, but lots of fun As the Terrace Head Chef you will be expected to ; Lead by example with regard to service standards as required. Be comfortable working under an Executive Head Chef to deliver the best possible culinary experience. Possess an outstanding knowledge of ingredients, seasonality, techniques and cookery. Work with your team to prepare, cook and present food to the highest standards ensuring guest expectations are exceeded with every plate. Ensure that recipes are always followed accurately, controlling portion size and waste. Ensure supplies are correctly issued, used and accounted for to carry out stock takes and food rotation procedures. Maintain records relating to food production activities and supplier information. Ensure Health and Safety and Food Safety Standards are maintained in line with company policy. Set objectives with your team and be responsible for the day to day running of the kitchen. Regularly assess employee performance and recognise training needs and potential. Hold team meetings on a regular basis to communicate targets, standards required and company and client information. Maintain strong and effective relationships with the Terrace Restaurant Manager and their front of house team. Help manage heart of house service areas to include cleanliness, hygiene, stock control and wastage. To have the ability, confidence and capability to deal with any guest or staff concerns. Be responsible for coaching, training and mentoring the kitchen team. Work alongside the Executive Head Chef, Restaurant Manager and teams to optimise sales and develop the business. The Ideal Candidate: Are you right for us? Our appointed Head Chef will have; Previous Head Chef experience in an ambitious, high volume and modern restaurant. A strong background from within hotel or restaurant sector, preferably at a 5 luxury star standard. Strong communication skills (verbal, listening, writing). Exceptional organisational skills. Possess a keen eye for detail. Have a passion and strong knowledge of gastronomy, ingredients and seasonality. An understanding of what it takes to create a 5 star dining experience from both front and heart of house. The determination to create a memorable culinary guest experience. A desire to create a strong and positive kitchen environment. Drive to work within the pressure of a high volume restaurant environment.
