Senior Sous Chef role involves running the day-to-day kitchen operations, working with the Head Chef to create menus and heading a team of chefs.
Key responsibilities include:
* Creating menus aligned with the restaurant's ethos.
* Delivering high quality dishes using seasonal Scottish ingredients.
* Running the restaurant pass.
* Mentoring and developing junior chefs.
The ideal candidate has:
* 2+ years experience in a high volume and quality led Chef de Partie or Jnr Sous role.
* A high understanding of classic cookery and seasonal ingredients.
* Experience implementing sustainable kitchen practices.
* Knowledge of costings, health & safety and logistics for events.
* An unrelenting pursuit of quality within all aspects of the kitchen.
