THE ROLE - PASTRY SENIOR SOUS CHEF
* 8 or more years of experience in pastry, with a significant portion in leadership roles.
* Strong expertise in food cost management, rota organization, and administration programs.
* Proven ability to communicate and collaborate effectively with suppliers.
* Advanced knowledge in chocolate, afternoon tea, Viennoiserie, and bread techniques.
* Experience in making departmental decisions, organizing tastings, and contributing to menu development.
* Knowledgeable in the optimization of flavors and maintaining high-quality standards in pastry production.
* Demonstrated capability to support, mentor, and work closely with Sous Chefs in enhancing their skills.
* Excellent organizational skills to handle rota, holidays, and other administrative tasks for the team.
* Effective problem-solving skills and decision-making ability in the absence of the Pastry Chef.
* Positive leadership style and the ability to foster a collaborative and productive team environment.
MAIN RESPONSABILITIES
The main responsibilities of the Senior Pastry Sous Chef are summarised below, the list is not exhaustive:
1. Food Cost Management and Administration:
o Manage food costs efficiently, optimizing resources and minimizing waste.
o Oversee rota organization, holidays, and other administrative programs for the pastry team.
2. Supplier Management:
o Communicate and work effectively with suppliers, ensuring smooth procurement processes and maintaining good relationships.
3. Advanced Pastry Expertise:
o Apply advanced knowledge in chocolate, afternoon tea, Viennoiserie, and bread techniques to support the Pastry Chef in creating new menus and amenities.
4. Decision-Making and Departmental Support:
o Support the Pastry Chef in making decisions for the department, especially in their absence.
o Organize tastings, flip menus, and contribute to the overall enhancement of the pastry offerings.
5. Flavor Optimization and Quality Assurance:
o Ensure that all pastry items meet the highest standards of flavor and quality.
o Collaborate with the Pastry Chef in maintaining consistency and excellence in production.
6.Support and Mentorship:
o Provide support and mentorship to Sous Chefs, contributing to their professional development.
o Work closely with team members to enhance skills and foster a positive working environment.
7. Departmental Leadership:
o Lead the pastry department by example, maintaining a positive leadership style and fostering collaboration.
o Handle responsibilities in the Pastry Chef's absence and contribute to the overall success of the pastry team.
