We are working with a fantastic client in the Lake District supporting them with their search for a Junior Sous Cher / Sous Chef for their 4* Hotel.
We are looking to speak with experienced candidates who have a minimum of 2 years' experience working in 4* star luxury hotels operating high quality / award winning restaurants.
Ideal Sous Chef Profile:
: Experienced Sous Chef, with a solid background working in high quality 4* hotels.
: A background in fine dining / rosette standard kitchens would be advantageous.
: Excellent financial understanding and the ability to work within forecasted budgets.
: Exceptional leadership skills, able to step in and run the kitchen in the Head Chefs absence and work with, motivate and develop the team around you.
: Passion, enthusiasm and creativity in the kitchen.
Sous Chef Responsibilities:
: Direct all kitchen operations in the absence of the Head Chef : food prep, cooking, food safety, ordering, suppliers, rotas, stocks, budgeting etc.
: Policy adherence : ensure all policies, procedures and standards are consistently adhered to.
: Menu development : desire and creativity to create and develop menus to drive the business forwards.
: Stock control and auditing : ensuring the kitchen is working within agreed and defined margins.
: Health, Safety and Hygiene compliance :Ensuring that all H and S, Food Safety, HACCP management and hygiene standards are continuously met.
: Team Management : shift management, staffing levels, recruitment, training and development, appraisals
: Food quality control : ensure all standards for food preparation, presentation and freshness is consistent across all dishes.
: Collaboration with FOH : communicate effectively with FOH Managers and staff during service and resolve any service:related issues quickly.
