PURPOSE
The Head Chef will deputise for the Executive Head Chef in all culinary areas, including leading on specific projects and overseeing staff to ensure that they follow procedures correctly. The Head Chef is also a creative role, where innovation and new ideas are encouraged through the development of new menus for a range of events and matchdays.
CLUB RESPONSIBILITIES

* Ensure the Club’s Safeguarding rules and regulations are adhered to at all times in accordance with current legislation.
CORE RESPONSIBILITIES/ACCOUNTABILITIES
Key Responsibilities:
* Leadership of the team to ensure effective delivery of catering elements within expected timescales and deputise for the Executive Head Chef in their absence.
* Ensure that the business maintains a 5-star Food Hygiene Rating.
* Creation of costed food menus, specification sheets and the preparation of allergen documentation for match days and events as required.
* Responsibility for ordering of food and catering items to maintain the correct stock levels in the Executive Head Chef's absence.
* Present ideas clearly, accurately and persuasively to achieve a high level of culinary excellence throughout the business.
* Identify ways to further expand and reinvent core business through new products or processes.
* Consistently develop innovative and high-quality products that are commercially viable and aligned to customer demand.
* Work alongside the Executive Head Chef to ensure labour spend and GP targets are achieved.
* Ensure accurate stock counts take place, and that stock control and rotation processes are being followed.
* Support the Executive Head Chef in the recruitment, training and retention of the Chef and Kitchen Porters team.
* Apply and maintain HACCP and COSHH systems in line with company procedures and specifications.
* To ensure that food is prepared, cooked, and served within Food Hygiene Legislation parameters and as per the company Food Safety Manual; and that accurate records are documented.
* To ensure safe practice within the kitchens in line with Health and Safety policies.
* Ensure the equipment within the kitchens is well maintained and that cleaning schedules are followed correctly.
* Devise control sheets for the testing of food within company specification alongside the Executive Head Chef.
* Maintain an awareness of all current and future legislation that may impact the operational aspects of the business.
* To develop relationships and support the management of all relevant key stakeholders including suppliers, staff, contractors, clients and customers.
PERSON SPECIFICATION
* Must be available to work home SAFC matchdays and ad-hoc events as required.
* A Level 2 Food Safety Qualification or higher.
* Competent in use of I.T. and any relevant software.
* 5 or more years of industry experience at a supervisory or management level.
* Able to converse effectively in English.
* Strong communication skills and able to effectively build professional relationships with internal and external stakeholders.
