About the role:
This role's aim is to manage the back of house food-led catering operation of Sunderland Greyhound Stadia. You as the Sous Chef will organize and supervise all kitchen and snack bar operations across your site, maintaining high food quality and complying with hygiene regulations. Controlling costs in general and maintaining good staff relations as well as maintaining all legal and company health, safety & HACCP standards, with the support of the Head of Catering. The remit will encompass all food preparation across your site.
Responsibilities for the successful Sous Chef include (but are not limited to):
* Support the Head of Catering in managing budgets, cost targets, and financial performance.
* Ensure revenue and cost targets are met; explain any variances.
* Order food and supplies within budget to meet GP and spend targets.
* Manage the Indicator platform: stock takes, reporting, allergens, and menu planning.
* Ensure compliance with Food Safety Management Systems and Health & Safety policies.
* Implement menu specs and portion controls; minimise waste.
* Coordinate stock takes, order supplies, and manage site food prep and service.
* Cook and supervise during events; oversee kitchen cleanliness and hygiene.
* Train and guide kitchen staff on food safety and H&S procedures.
* Maintain quality control from prep to plating.
* Ensure EHO standards and HACCP documentation are met and maintained.
* Communicate effectively with other departments and arrange staff training.
* Oversee allergen compliance and prepare for changes in nutrition laws.
* Liaise with inspectors and manage rotas, staff allocation, and attendance records when required.
The person we are looking for as a Sous Chef has…
* Level 4 Food Management in Food Safety preferred, Level 3 minimum.
* Experience as a Chef de Partie in high quality, fast-paced operation.
* Good understanding of purchasing systems, technical packages & I.T.
* Strong leadership skills.
* Passionate about the kitchen environment and about our product.
* Works well under pressure. Organised, systematic, and process-driven.
