Executive Sous Chef Executive Sous Chef, alongside the Executive Chef, will be responsible for managing the day-to-day kitchen operation, ensuring that food is produced and served to the highest quality. The kitchen operation is across multiple outlets at the Resort which includes production and service for the bar, 1906 fine-dining restaurant, Clubhouse Restaurant, Banqueting, In-room dining and the staff canteen. As a leader in the Kitchen and Food & Beverage team, your role encompasses all elements of compliance with food safety, kitchen and back-of-house hygiene and cleanliness. Essential Functions Select, train and supervise kitchen staff in the proper preparation of menu items, equipment and safety measures. Manage department expenses, including food costs, supplies, uniforms, and equipment Set and maintain goals for culinary activities, including performance, budget, and team goals Demonstrate cooking techniques and equipment to staff, leading by example and mentoring the team to grow. Interacting with guests in the Restaurant on a regular basis to talk about menus, food and experiences. The execution of and the monitoring of culinary excellence within the Kitchen Brigade menu design and development across the multiple outlets. Perform other duties as necessary and assigned. As an example, special orders, buffet presentation, V.I.P. parties, writing specialty menus for promotions. QUALIFICATION STANDARDS To be fully trained and demonstrate an underpinning knowledge of food hygiene, and keep up to date with changes to regulations To lead junior members of the Kitchen team by example and offer coaching and feedback to all junior members of the team To follow all Resort guidelines on waste management to ensure the Kitchen operates efficiently To be a holder of an intermediate food hygiene certificate.
