The kitchens at the Grand Hotel are a hive of chefs using their culinary flair to create appetising dishes for all our guests. As Senior Sous Chef- Banqueting you will be a key team player in the kitchen, helping to ensure the effective running of the department - providing service to our incredible Grand Ballroom and 8 Conference & Events Meeting rooms.
What you will do
1. Oversee the planning, organising and control of day-to-day operations of the department thereby ensuring the established standards of performance are maintained and total customer satisfaction is achieved.
2. Work alongside our Head Chef to develop menus and embody the spirit of our banqueting facilities.
3. Take responsibility for implementing and continually reviewing the effectiveness of all food hygiene practices and procedures to ensure compliance.
4. Assist the Head Chef to oversee the training of new staff as well as ongoing training for existing staff, appraise staff on a regular basis and set measurable objectives.
5. Motivate the team by leading from the front with confidence; being dynamic and positive at all times.
6. Remain totally customer focused by consistently delivering excellent customer service with an informed, friendly and effective approach.
Minimum Requirements
1. Previous Senior Sous Chef experience in a similar environment is essential.
2. Previous experience within a busy Banqueting Kitchen.
3. Strong business acumen, or a desire to be taught this.
4. Exceptional communication skills and the ability to self-motivate.
5. Fully flexible in their approach to work and able to work shift patterns through weekdays and weekends.
