Job Title: Senior Sous Chef Salary: £39,000 - £42,500 depending on experience Benefits: Free meals, excellent pension scheme, paid overtime, healthcare cash plan, physiotherapy, Purpose: Support the Head Chef in food preparation and service, ensuring the highest standards at all times. Key Responsibilities: Lead shifts and supervise staff in the absence of the Sous Chef, maintaining top-quality service for Fellows, College guests, students, and staff. Deputise for the Head Chef when needed. Assist in supervising the Sous Chefs and manage kitchen resources efficiently, minimizing costs and energy usage. Follow Food Safety and Health & Safety regulations. Collaborate with the Head Chef to compile and submit food orders, ensuring proper stock rotation. Food Preparation & Menu Planning: Assist with planning and developing cyclic menus. Contribute to the creation of signature dishes for functions. Promote the use of fresh produce and ensure dishes meet agreed recipes. Food Service: Ensure excellent customer satisfaction in food preparation and service. Oversee food service areas, ensuring proper staffing, preparation, and presentation. Brief food service staff on menu content and allergens before service. Conduct regular checks during meals for availability, cleanliness, and presentation. Staff Development: Work with the Head Chef to develop training plans for kitchen staff. Provide on-the-job training and develop staff to competition standards. Other Duties: Support staff induction and complete progress reviews during probation. Record staff sickness and conduct appraisals as directed by the Head Chef. Assist with other duties as required by the Director of Hospitality and Head Chef. Person Specification: Qualifications: NVQ Level 2 & 3 in Professional Cookery Basic Food Hygiene Certificate Training in HACCP and COSHH Skills & Experience: Strong leadership, organizational, communication, and customer service skills. Minimum 3 years in a similar role with HACCP knowledge. Experience in a College environment (desirable). Personal Attributes: Friendly, cooperative, and approachable. Responsible, trustworthy, and a team player. Flexible and able to adapt to change. Conditions: Must be able to work weekends and overtime as required.
