Area Head Chef Rockfish is growing, with several new locations planned for 2024 and 2025. As we expand our senior kitchen operations, we're seeking an experienced and dynamic Area Head Chef to lead and inspire our kitchen teams across multiple locations in the Exeter & East Devon area. About Us: At Rockfish, our chefs work closely with their teams to support, coach, and mentor. We take pride in our world-class sustainable seafood, MSC certified or caught and managed in the Southwest of England. Every morning, we buy our fish directly from Brixham market, which is then prepared by our team on the quayside, packed, and delivered to each restaurant before service. Key Responsibilities: Manage Operations: Oversee ordering, stock levels, and waste control to ensure kitchen efficiency and budgeted profitability. Responsible for daily operational reporting and providing constructive feedback to sites and the operations team. Hands-On Leadership: Manage your own time effectively, working across a mixture of lunch and dinner shifts and within the kitchens at peak periods. Influence the delivery of the Rockfish experience by being hands-on and dressed in whites during shifts. Staff Management: Approve and manage head chefs' holidays, ensuring adequate relief support during absences and planning holidays to avoid peak periods. Recruit lead roles within your kitchens, ensuring proactive succession planning for business growth. Training and Development: Deliver induction and ongoing support for new head chefs and kitchen management, using company training systems and checklists. Ensure all head chefs are signed off and compliant with Rockfish standards. Coach and mentor chefs at all levels to fulfil their potential, planning achievable goals and managing performance. Scheduling and Compliance: Prepare schedules two weeks in advance, adjusting for seasonal demand and ensuring they are operationally sound and within budget. Maintain discipline and manage the performance of management teams, providing regular feedback and conducting annual reviews. Quality Control: Ensure all chefs are preparing food to the highest standards as defined by Rockfish specifications, using prep lists and guidance.
