Senior Sous Chef, required to work with a dedicated Head Chef at this prestigious hotel located in the Dartford / Wilmington area of Kent, offering top quality fresh food across a range of restaurants, banqueting and menus.
* Shift pattern for the role of Senior Sous Chef, is given as 3 single shifts + 2 double shifts per week
Reporting to the Head Chef the role of the Senior Sous Chef will be primarily responsible for managing the day-to-day kitchen operation, ensuring that food is produced, and the finished dish is served to the highest standard.
Delivering a restaurant menu to inspire local patrons, an afternoon tea menu that encourages loyal local business will all be part of the role in supporting the Head Chef.
Your responsibilities will include:
1. Assisting with recruitment, training and coaching a team of 12 Chefs and 4 Kitchen Porters.
2. The menu planning, supplier resourcing, ordering, delivery, storage, preparation, cooking and service across the range of food areas within the Hotel.
3. Ensure effective people management of the kitchen team, including giving recognition, support and training, performance management, scheduling and motivating/coaching team members.
4. Development of menu ideas to progress the food offering to achieve rosette standards across all areas of service; restaurant, banqueting, afternoon tea, corporate functions.
