With the arrival of a highly acclaimed executive chef, the hotel has launched a 60-cover restaurant already receiving critical acclaim for its refined, classic European dining. With a focus on seasonality, British produce, and exceptional service, the vision for the restaurant is to become a destination restaurant on the South Coast.
The Role
Reporting directly to the Executive Head Chef, you will play a pivotal role in ensuring the success of the restaurant, maintaining exceptional food quality, and driving standards of consistency, efficiency, and excellence. This is a hands-on role that requires a passionate, skilled chef who understands the demands of a high-caliber kitchen.
Key Responsibilities:
* Lead the kitchen in the absence of the Executive Head Chef, ensuring seamless service.
* Maintain the highest culinary standards, executing a Grand European-style menu with precision and care.
* Oversee stock management, food cost control, and GP performance (target 70%).
* Ensure best practice kitchen operations, including Food Safety Management Systems & Health & Safety protocols.
* Mentor and develop the team, contributing to scheduling and training.
* Engage in menu development alongside the Executive Head Chef.
* Confidently utilize digital systems for kitchen operations, including Market Man, RotaCloud, ResDiary, Dropbox, and more (training available).

* Have held a senior role in a professional kitchen with a reputation for excellence.
* Possess strong leadership skills and experience managing kitchen teams.
* Demonstrate a deep knowledge of seasonal British ingredients and a passion for classical cookery.

* Have excellent administrative skills and confidence using digital management systems.
