At cosy café - bistro's, we are looking for an experienced, dedicated, hard-working, talented, creative Head Chef to take control and manage our kitchen operation.
Main Purpose of the Role
To deliver high quality food to our restaurant/bistro customers and ensure the overall business achieves its ultimate potential in sales and profitability by creating a cosy yet stylish and contemporary environment, offering high quality, traditional British, homely café/lunch/brunch food.
Key Responsibilities and Duties
1. Take total responsibility for the quality and profitability of food production.
2. Work alongside the General Manager & owner, ensuring that standards of both food production and service are consistently high and that the agreed standards are maintained and regularly tested and reviewed.
3. Ensure the Kitchen is always organised to meet business demands, with particular attention to food costings, and encourage an ethos of driving for results ensuring quality is not compromised.
4. Take responsibility for all food-related stock items and order all food items in accordance with business levels.
5. Produce, in good time, all dishes to the agreed specifications and profitability.
6. Motivate the kitchen team by being confident, dynamic, and positive at all times, leading from the front.
7. Promote a positive attitude and display the ability to ‘make things happen’ to achieve or exceed anticipated results and encourage the same in the team.
8. Create and subsequently develop new menu & dishes.
9. Carry out training with the team to continually improve the skill base of the kitchen team.
10. Take responsibility for implementing and continually reviewing the effectiveness of all food hygiene practices and procedures to ensure compliance with food hygiene legislation and the Company’s Food Hygiene Policy.
11. Inspect the physical aspects of all kitchen areas, cold rooms, and equipment, reporting any defects immediately to the General Manager & owner.
12. Ensure compliance within the Kitchen with legal, government, and company policies relating to fire, health, and safety procedures and ensure the team are fully conversant with their responsibilities.
13. Complete all administrative work in a timely manner.
14. Hiring & firing kitchen staff.
15. Stock ordering.
The Ideal Candidate
You will need previous experience working in a fast-paced food and beverage operation. Passion, creativity, imagination, and inspiration are essential. The ideal candidate will have strong leadership skills combined with a team player attitude. We are looking for a highly structured and organised individual who takes pride and passion in the food side of our operation and remains calm yet efficient, especially under pressure.
It is essential that you hold NVQ 1, 2, 3 or City & Guilds equivalent in Intermediate Food Hygiene. A good teamwork ethos striving for the best for the business is required.
