Job Description

COMO Metropolitan London is an inner city property stripping back to the non-essential elements of a traditional hotel. The result is an urban retreat that is cool, accessible and sophisticated. COMO Metropolitan London is a 144 bedroom property with 19 private residences situated in the Heart of Mayfair.
What you will do:
1. Working with Head Chef to manage daily kitchen activities, including overseeing the team, assisting with menu preparation, ensuring food quality and freshness, and monitoring ordering and stock rotation.
2. Ensure quality and consistency by following designated recipes.
3. Lead the kitchen brigade in the Head Chef's absence.
4. Provide guidance to junior Chefs, including, but not limited to cooking, food preparations, and plating dishes.
5. Oversee and organize kitchen stock and ingredients.
6. Ensure a stock rotation system and verify all food products are properly dated and organized for quality assurance.
7. Ensure the fridges are well-stocked, especially before and during prime operation hours.
8. Manage food preparation and product ordering by keeping detailed records and minimizing waste, plus work with existing systems to improve waste reduction and manage budgetary concerns.
9. Supervise all food preparation and presentation to ensure quality standards.
10. Assist the Head Chef with menu and recipe creation.
11. Plan the Kitchen rota.
12. Ensure hygienic and safe kitchen environment.
13. Participate in training and maximize the opportunities for the ongoing development of junior chefs to prepare them for more responsibilities.
Who you are:
1. Formal culinary training.
2. Previous five-star hotel or fine dining restaurant experience.
3. Extensive food and beverage knowledge.
4. Strong organisational skills.
5. Attention to detail.
6. Level 3 Supervising Food Safety Qualification.
7. Excellent spoken and written English.
8. Strong written & verbal communication skills.
9. Leadership.
10. Ability to work under pressure.
11. Self-motivated.
12. Creative problem-solver.
