Key Responsibilities: Oversee all aspects of kitchen operations, including menu planning, food preparation, and presentation. Utilize the finest Scottish ingredients, such as locally sourced seafood, game, and produce, and elevate them with classic French culinary techniques. Ensure the highest standards of food quality, taste, and presentation, aiming for 1-2 AA Rosette level cuisine. Manage and train a kitchen brigade of 5, fostering a positive and productive work environment. Maintain inventory and order supplies as needed, ensuring cost-effective operations. Adhere to health and safety regulations, maintaining a clean and safe kitchen environment. Collaborate with management to develop and implement innovative menu ideas, particularly for weddings and special events in our 27-bedroom hotel with a ballroom. Qualifications: Proven experience as a Head Chef or in a similar leadership role within a high-end restaurant or hotel. Exceptional culinary skills with a strong understanding of various cooking methods, ingredients, and cuisines. Excellent leadership and team management abilities. Strong organizational and time management skills. Ability to work under pressure and maintain high standards in a fast-paced environment. Relevant culinary qualifications and certifications.
