Our client is a hotel on the Suffolk coast, with an award winning golf club on site. Part of a small group of individual family run hotels, country club and spa, the hotel offers diners a range of delicious classic dishes in the main restaurant and bar area.
What’s involved?
As the Sous Chef, you will be providing guidance to a team of chefs and leading the team in the Head Chef’s absence. You will be passionate about using fresh, locally sourced produce where possible, building strong relationships with suppliers.
The successful Sous Chef will have previous experience of creating mouthwatering dishes using fresh ingredients and will be able to bring some of their dishes to life in the menus. You can expect to cater for an average of 50 covers at breakfast which is offered as a plated service, and an average of 50/60 covers at lunchtime. Dinner covers vary.
You will monitor portion and waste control to maintain profit margins whilst ensuring you and your team have high standards of food hygiene and health and safety at all times.
