Job Title: Senior Sous Chef

Reports To: Head Chef
Farnham Castle is a unique, historic, multi-award-winning Wedding and Events venue on the Surrey/Hampshire border, hosting outstanding weddings, private events, conferences and meetings, with an exceptional reputation for delivering outstanding dining experiences.
Summary:
Farnham Castle is looking for a Sous or Senior Sous Chef to join an energetic team to use creativity and passion, to create and deliver 5-star, high quality food for weddings and events whilst upholding the kitchens reputation, allowing for an expanding clientele, and contributing to long-term success. Working alongside the Head Chef, they will ensure the kitchen meets exceptionally high standards and adheres to company policies. They will represent the kitchen in the Head Chef's absence. This is an important, interesting, varied and satisfying role.
Key Responsibilities:
- Ensure high culinary standards, producing high quality plates both in design and taste, on time and to client specification
- Plan and manage shift work schedules from day to day
- Have responsibility with food purchasing, delivery, and storage controls
- Have a commercial understanding and be aware of the need for cost control
- Prepare, cook, and present menus to a wide range of events, from small meetings to large weddings and formal dining
- Take a lead role in overseeing and representing the kitchen in the absence of the Head Chef
- Help the Head Chef develop new menus and costings
- Assist with recruiting, managing, and training kitchen staff to include chefs and kitchen porters
- Be aware of profit margins and keep waste to a minimum
- Comply with food hygiene and health & safety regulations and standards, including but not limited to kitchen equipment, preparation and deliverance of menus and allergens
- To take responsibility and manage a safe and hygienic work environment
