This is an exciting opportunity to work in a vibrant, multifaceted setting with a diverse menu offering modern British cuisine, classic pub fare, and bespoke dishes for private events. About the Venue: Our hotel is a popular destination for both casual dining and special occasions, featuring a traditional bar with real ales, a brasserie, and pub dining areas. We also offer three private function rooms, making it the perfect venue for family gatherings, celebrations, and corporate events. The Brasserie and Pub Dining provide a blend of traditional favourites, chef specials, and an eclectic mix of modern British dishes, all with influences from around the world. A custom-built ageing unit showcases our 35-day dry-aged ribs of beef, while our gin bar offers a perfect starting point for an evening out. Your Role: As Senior Sous Chef, you will work closely with the Head Chef to ensure smooth operations in the kitchen, lead a motivated kitchen team, and contribute to the creation of innovative and exciting menus. You will be responsible for maintaining high culinary standards, ensuring consistency across all dishes, and supporting the Head Chef in all aspects of kitchen management. This is a hands-on role where you'll get the chance to develop your skills, oversee kitchen operations, and be involved in both à la carte dining and large-scale private events. Key Responsibilities: Assist the Head Chef in the day-to-day running of the kitchen, ensuring that all dishes meet our high standards. Help develop and execute seasonal menus with a combination of traditional British classics and modern dishes inspired by global flavours. Lead and inspire the kitchen team, providing guidance and training to junior chefs and ensuring a positive working environment. Oversee food preparation, cooking, and presentation to ensure consistency and quality. Manage kitchen operations during the Head Chef's absence, including stock control, inventory management, and food safety standards. Assist with cost control, including monitoring food waste, portion sizes, and supplier relationships. Maintain high standards of hygiene, health, and safety in line with company policy and regulations. Play an integral role in preparing bespoke menus for private events and functions, ensuring an exceptional guest experience. Skills & Experience: Proven experience as a Sous Chef, Senior Sous Chef, or Chef de Partie in a high-volume or diverse dining environment. A strong understanding of modern British cuisine with influences from around the world. Experience in managing and leading a kitchen team, with the ability to motivate and train staff. Strong organisational skills, with the ability to manage multiple tasks in a fast-paced environment. Knowledge of food safety standards and a commitment to maintaining high health and safety standards. Passionate about food, with a creative approach to menu development and presentation.
