My client, a unique stylish hotel, restaurant and events venue in the heart of historic Ely, Cambridgeshire is looking for a Sous chef to join their kitchen.
Job Purpose:
To lead the kitchen brigade in the absence of Head Chef. Assisting the Head Chef in the planning, preparation, production, service and ordering of all food items and kitchen supplies, adhering to budgetary requirements. Ensuring they provide a high level of efficiency whilst maintaining and improving the standard and quality of service.
Key responsibilities:
1. Review business sheets and meet with Catering Manager and Head Chef regarding the day and week ahead business.
2. Prepare and designate prep lists tasks set by the Head Chef and commend in his absence.
3. Delegate daily tasks to all levels of Brigade.
4. Control wastage and portion sizes to aid achievement of standards of dishes set.
5. Maintain all cleaning and operational records/data accumulated within department.
6. To attend any departmental and training meetings as required in absence of Head Chef.
