Job Overview
The Kitchen Manager will be responsible for overseeing all kitchen operations, ensuring high standards in food quality, kitchen safety, and team leadership. This role requires a strong focus on maintaining relationships with local farmers and suppliers, managing food and labor costs, and adhering to all health and safety regulations. Key Responsibilities
1. Locally Sourced Food Management : Establish and maintain relationships with local farmers and suppliers to source high-quality organic ingredients.
2. Menu Execution : Ensure consistent and exceptional execution of our wood-fired pizza and other menu items, maintaining our high culinary standards.
3. Kitchen Leadership : Lead, train, and develop the kitchen team to ensure a positive, efficient, and collaborative work environment.
4. Cost Control : Manage and control food and labor costs by monitoring inventory, portion sizes, and staffing levels while maintaining quality and service standards.
5. Health and Safety Compliance : Ensure the kitchen adheres to all state health codes and safety regulations, maintaining a clean, organized, and safe work environment.
6. Sustainability Practices : Uphold the restaurant’s commitment to sustainability by minimizing waste, composting, and finding creative ways to utilize seasonal ingredients.
7. Team Development : Conduct ongoing training in culinary techniques, safety practices, and teamwork to maintain a high-performing kitchen staff.
8. Inventory Management : Oversee inventory levels, ordering, and receiving to ensure the kitchen is always stocked with fresh, organic ingredients while minimizing waste.
9. Collaboration with FOH : Work closely with front-of-house staff to ensure smooth service, clear communication, and alignment on quality and customer experience.
Qualifications
10. Experience : Minimum of 1 year of experience as a Kitchen Manager, Sous Chef, or similar role in a fast-paced, high-quality restaurant environment. Experience with organic food and local sourcing is highly preferred.
11. Culinary Expertise : Strong understanding of cooking techniques, particularly with organic ingredients and wood-fired ovens, and a passion for creating delicious, health-conscious meals.
12. Supplier Relationships : Comfortable building and maintaining relationships with local farmers, purveyors, and suppliers.
13. Leadership Skills : Proven ability to lead a team with a focus on collaboration, respect, and creating a positive and productive work environment.
14. Cost Management : Strong understanding of food and labor cost controls, inventory management, and budgeting.
15. Health and Safety : Comprehensive knowledge of state health codes and experience maintaining a clean, organized, and compliant kitchen.
