Lead and inspire the kitchen team, sharing your culinary expertise, mentoring junior chefs, and creating a collaborative, upbeat environment. Collaborate with the Executive Head Chef in menu development, experimenting with new flavours and seasonal ingredients to keep the offerings fresh and exciting to meet both guest preferences and operational goals. Ensure all dishes are prepared to the highest standards and reflect Fremantle Bar & Kitchen's culinary vision. Maintain the highest standards of food quality, portion control, and presentation, ensuring that each dish meets both guest expectations and IHG brand standards. Train and mentor kitchen staff on new recipes, techniques, and safety procedures. Provide feedback and guidance to help chefs grow professionally and maintain a motivated and high-performing kitchen team. Monitor inventory management, ordering of supplies, manage stock levels and cost control. Ensure the kitchen is well-stocked with the necessary ingredients while minimising waste and adhering to budgetary constraints. Enforce all food safety, hygiene, and cleanliness standards in the kitchen in line with HACCP and COSHH regulations, creating a safe and organised workspace for the whole team. Ensure kitchen staff adhere to food safety procedures. Assist in managing kitchen schedules, ensuring adequate staffing levels during busy periods. Work closely with F&B/ service teams to ensure seamless service and address any guest concerns regarding food or service quality. Conduct diligence audits to ensure compliance with industry regulations, risk management protocols and company standards. Perform environmental audits to assess and improve sustainability practices, ensuring adherence to environmental law. Collaborate with internal and external stakeholders to drive continuous improvement in sustainability and regulatory adherence. Strong leadership skills, with the ability to motivate and develop the team while maintaining high standards.
