Sodexo Liveis delighted to be recruiting for a Sous Chef to join our esteemed culinary team at Ascot Racecourse, to support and enhance our fine dining experience. Supporting the Head Chefs, you will assist in the delivery of the culinary elements of our business including food production for Royal Ascot, Raceday’s, Off-site Events, Client Tastings and Chef Briefings. As part of the culinary team, you will be accountable for Food Safety compliance and delivering against our agreed operational standards. You will demonstrate a good knowledge of current food trends and use our food philosophy to bring innovation into the food offers in the business. MAIN RESPONSIBILITIES Deliver culinary projects across all areas of the business in the agreed timescale in conjunction with the Head Chefs To ensure all tasting dishes etc are photographed to enable us to build Standard Operating Procedures, and achieve consistency in event delivery To be part of the menu design process and support innovation that drives positive PR, positive client feedback, increased revenue or helps to attract new business To articulate the service offers for each event - the food element, the equipment, the flow and the customer experience To cost each menu and always work within the financial parameters of the business To represent the culinary team and operationally support at client tastings and be able to speak passionately about each dish To be highly organised in kitchen management.The role is varied based on events and racedays, but will include main production, to heading up restaurants and give opportunities to work at off-site events To ensure that all food is prepared with due care and attention, particularly in regard to customers’ special dietary requirements and in line with allergen legislation To follow Sodexo live and Ascot waste streaming and recycling policies and objectives Manage the ordering process for all areas of the business that you are responsible for, to ensure that it meets specifications, agreed budget for the event and minimises wastage through accurate production and delivery To support, and work in conjunction with, the event managers both at the CPU and on location, t o build positive, mutually beneficial relationships within the business THE IDEAL CANDIDATE You will be an exceptional Sous Chef with extensive menu development expertise and previous experience of working in both of large and fine dining establishments. You will be passionate about the catering industry and have excellent knowledge of current trends.You will also have a strong understanding of the financial elements of the role and possess good supervisory skills, as the need will arise to manage casual staff during peak periods.Above all, you will have the skills and the ability to deliver the quality of service that will contribute to the overall guest experience. You will also have: NVQ 2 or equivalent in food production A minimum of two years gained in an Event or Fine dining environment, at Chef de Partie or above Level 3 Food Safety in Catering Excellent communication skillsand the ability to present to colleagues, peers and clients Financial awareness and understanding of a food profit and loss account and the ability to articulate how to control food cost and generate a positive food margin Excellent organisational and planning skills Experience in the use of Microsoft Word, Excel, Powerpoint and Email WHAT WE OFFER In return for your commitment and expertise you will be rewarded with a salary of £38,000 to £40,000 plus access to a suite of benefits, which includes: Performance-related bonus Contributory pension scheme A buy and sell holiday scheme of up to 3 days (FTE) Volunteering days via our charity partner STOP HUNGER For more information on all the great benefits Sodexo offer to support you and your loved ones, check out the attached Benefits Guide at the bottom of this advert We’re experience makers and food fanatics.
