Ellis Mack is currently recruiting for this 5-star boutique hotel in Dundee. Seasonal, fresh ingredients, used in the best Scottish dishes, in a wonderful location.
Role/Responsibilities:
Running a section and working closely with the Commis Chef
Taking on responsibility of stock take and health & safety when required
Going above and beyond in all aspects of the role to achieve the high standards the
guest expects
As a Junior Sous you will be responsible for the maintaining & driving consistently high
standards of produce
Daily Stock Control & ordering
Input into all areas of kitchen management inc all KPI targets such as GP %,
environmental health issues, menu design etc.
Skills /Experience:
A basic understanding and willingness to learn classic cookery and seasonal British
ingredients
Good, demonstrable knife skills
Thorough understanding of kitchen etiquette and practice, such as lack of wastage,
cleanliness, and punctuality
Willingness to learn and develop
Level 2 food safety
An unrelenting pursuit of quality within all aspects of the kitchen
