Job: Head Chef at STEREO
Based in: Covent Garden, London
DUTIES AND RESPONSIBILITIES
Kitchen Operations:
1. Implement menu and ensure consistent, high quality food is served to customers.
2. Maintain menu integrity in developing future menu items.
3. Ensure the smooth running of the kitchen.
4. Coordinate with restaurant management team on supply ordering, budget, and kitchen efficiency and staffing.
5. Ensure the consistent smooth running of each food station.
6. Ensure effective control of stock purchasing, receipt, storage, preparation and service with regard to quality and quantity. Maintain a high level of food quality and production with the aim of exceeding our guests' expectations.
7. Ensure that all Health and Safety regulations are adhered to and applied.
8. Organise orders, deal and maintain cooperation with suppliers.
9. Oversee the maintenance of kitchen equipment and organise repairs when needed.
Team Management:
1. Participate in the recruitment of the kitchen team.
2. Manage and lead the kitchen team, ensuring a smooth operation of the kitchen.
3. Plan rotas, train and supervise the kitchen team, encouraging their career development.
4. Ensure the kitchen team adheres to quality, hygiene and cleanliness standards.
5. In cooperation with the Operational Management, handle staff issues (sick leave, attendance, behaviour, disciplinary actions).
Financial & Reporting and Marketing:
1. Ensure that the food operations are controlled in order to reach the desired cost of sales, maximizing potential and optimizing resources.
2. Manage the inventory and order stock as needed.
3. Work with marketing, events, and PR on menus, photoshoots, and other needs.
