Located in Ongar, Essex, Smith's of Ongar has become well known as one of the South Easts best seafood restaurants and are recruiting for an experienced, enthisiastic Sous Chef to join its established team;
The ideal candidate must be capable of cooking fish, meat and shellfish to a high standard, have an excellent understanding of fish preparation and storage and a proven track record of at least 3 years in a top end, high volume restaurant.
PRINCIPLE DUTIES AND RESPONSIBILITIES:
Follow all Company procedures with regards to Health and Safety, Allergens, Hygiene and General Work Procedures.
Ensure the kitchen uniform and personal hygiene requirements are adhered to.
Complete the staff rota and allocate the appropriate staff to each section.
Joint responsibility for creating new dishes and assisting the Head Chef with the creation of weekly specials.
Management of Produce, stock rotation and ensure that all store rooms, fridges and freezers are in order. Ensure temperature records and food labeling are maintained and up to date.
Work to the budgets set by the Head chef with regards to staff and food costs.
Monitor & control stock levels.
Orders of food stock appropriate to sales levels and not over ordered.
Prepare food for service appropriate to sales levels.
Control wastage and records and report all wastage.
Ensure all dishes are to Company specification.
Ensure all food is presented for service in a timely manner and in the correct sequence.
Maintain a professional and productive working relationship with staff in all departments.
