Whatwill you be doing as Head Chef
* Management andleadership of the hotel kitchenteam.
* Management of the restaurant room servicebar and conference food service operations on a day to daybasis.
* Respond to any changes in food stylesand service trends as dictated by the market (hotel /customers)
* Ensure food standards preparationpresentation and cooking techniques are established and monitoredto meet Brand Standard guidelines and maintained at thatlevel
* Ensure the highest possible standard ofhygiene is practiced and maintained by the entire F&BService team to meet Health & Safety regulations and HACCPfood preparation guidelines.
* Cultivate apositive work environment where learning and personal developmentare benchmarks by which quality improvement isdriven.
* Facilitate the smooth running of thedepartment through adequate supply of materials andequipment.
* Complete costings on all menu itemsprior to introduction of new dishes.
* Maintainfood costs at budgeted levels by careful preparation service andstorage of food product.
* Establish ongoing OnJob Training Programs within the department to meet Brand andService Standards. Use Department Procedure Manuals as abase for all service procedurestraining.
* Induct new staff into the teamdepartment and Hotel in the first week of their employmentfollowing guidelines. Ensure that all staff under your controlcarry out their duties in accordance with the Brand and ServiceStandards and Procedures Manuals.
* Participatein workplace consultation on matters pertaining to Workplace Healthand Safety as per the hotels agreedarrangements.
