Sous Chef - Roe Restaurant

About us-Roe is our new restaurant in Wood Wharf (near Canary Wharf in East London) which opened early 2024. Roe is the third restaurant from James Robson, Chefs Jack Croft and Will Murray, the team behind the hugely successful Fallow and Fowl restaurants in St James. Roe will be a 300 plus cover restaurant spread over three floors with large open kitchens, private dining rooms, chefs counters, live plant growing walls and a terrace which overlooks the open waters of the South Docks.
About you- As a Sous Chef, you will be a hands-on, proactive, and enthusiastic person, passionate about all things food and sustainability.
Your Role
* Previous experience as a Sous Chef in a high-end restaurant
* Proven ability to lead and inspire a large team
* Ability to stay calm under pressure
* Manage food and labour costs, including stock takes, to ensure profitability and budget targets are met.
* Continuously assess and improve kitchen processes to enhance efficiency and quality.
* Monitoring wastage
* Mentoring and developing junior chefs
